Braised Pork Ribs with Potatoes

Ingredients:

  • Pork ribs, potatoes, leek (or scallion), dried chili.

  • Seasonings: Rock sugar, fish sauce, salt, fermented bean paste.

Instructions:

  1. Pre-boil the ribs:
    Wash the pork ribs thoroughly. Boil them briefly in a pot with cooking wine, a bit of green onion, and ginger. After boiling, remove and rinse the ribs again.

  2. Caramelize the sugar and sear the ribs:
    Add oil to a pan, then add the rock sugar. Stir continuously over low heat until the sugar melts. Slightly increase the heat and keep stirring until the sugar turns brown. Add the ribs and stir to coat them evenly, allowing them to take on a rich color. Then add green onion, ginger, dried chili, star anise, and 1 spoon of fermented bean paste. Stir well, then pour in hot water until it just covers the ribs.

  3. Simmer and finish:
    Add 1 spoon of fish sauce. Simmer for 30 minutes, then add potatoes and a pinch of salt. Continue cooking for another 10 minutes. Remove the lid, increase the heat to reduce the sauce until it thickens. Adjust seasoning with a little bouillon if needed, stir well, and sprinkle chopped scallions on top before serving.
