Ingredients:
2 cups cooked white rice (day-old works best)
1 cup well-fermented kimchi, chopped
½ cup Spam, diced
2 tablespoons kimchi juice (optional but adds flavor)
1 tablespoon gochujang (Korean red pepper paste)
1 tablespoon soy sauce
1 tablespoon sesame oil
1 green onion, chopped (optional)
1 tablespoon vegetable oil
Sesame seeds for garnish (optional)
Fried egg (optional topping)
Instructions:
Heat the oil in a large pan over medium heat. Add the diced Spam and stir-fry until it’s golden and slightly crispy.
Add chopped kimchi to the pan. Stir-fry for 2–3 minutes until fragrant and softened.
Add the rice and break it up with your spatula. Mix everything well.
Stir in gochujang, soy sauce, and kimchi juice (if using). Cook for 4–5 minutes, stirring often, until everything is evenly coated and heated through.
Drizzle with sesame oil, mix again, and turn off the heat.
Top with green onions, sesame seeds, or a fried egg if you like.
