Ingredients:
- 1 pound squid, cleaned and cut into rings or bite-sized pieces
- 4 scallions, thinly sliced (separate white and green parts)

- 1 tablespoon ginger, minced (optional, adds depth of flavor)
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional, adds umami)
- 1 tablespoon cooking oil
- 1 teaspoon cornstarch
- 1 tablespoon water
- Salt and pepper to taste
Instructions:
1. Prepare the Squid: Clean the squid thoroughly. Remove the innards, beak, and eyes. Cut into rings or bite-sized pieces. Pat dry with paper towels. This helps achieve a better sear and prevents the squid from becoming tough.
2. Marinate (Optional but Recommended): In a bowl, combine the squid with 1 tablespoon of soy sauce and a pinch of salt and pepper. Let it marinate for about 10 minutes. This tenderizes the squid and adds flavor.
3. Prepare the Sauce: In a small bowl, whisk together the remaining soy sauce, oyster sauce (if using), cornstarch, and water until smooth.
4. Stir-fry: Heat the cooking oil in a wok or large skillet over medium-high heat. Add the white parts of the scallions and garlic and ginger (if using) and stir-fry for about 30 seconds until fragrant.
5. Cook the Squid: Add the squid to the wok and stir-fry for 2-3 minutes until it turns opaque and slightly browned. Don't overcook, or it will become tough.
6. Add Chilies and Green Onions: Add the sliced red chilies and the green parts of the scallions. Stir-fry for another minute until the chilies are slightly softened and the green onions are wilted.
7. Add Sauce: Pour the sauce into the wok and stir-fry for about 1 minute, or until the sauce thickens and coats the squid.
8. Season and Serve: Season with salt and pepper to taste. Serve immediately with steamed rice.

- Spice Level: Adjust the amount of chili to your liking. You can also use other chilies or chili flakes.
- Other Vegetables: Feel free to add other vegetables like bell peppers, mushrooms, or snow peas. Add them along with the chilies and green onions.
