Turkey, Broccoli, Mushroom & Wild Rice Soup

Ingredients

  • 2 cups cooked turkey breast, chopped (frozen and thawed works great)

  • 1/2 tsp garlic purée

  • 1 tbsp butter

  • 1 1/2 cups chopped fresh broccoli

  • 1 package Uncle Ben’s Fast & Fancy Fine Herb and Wild Rice

  • 1 can condensed mushroom soup

  • 2 Knorr Homestyle Chicken Stock Gels

  • 3 cups hot water (divided)

Instructions

  1. In a large pot, melt butter over medium heat. Add chopped turkey and garlic purée. Sauté until lightly browned and fragrant.

  2. Stir in chopped broccoli and cover the pot. Steam for several minutes until broccoli is tender.

  3. Meanwhile, cook the rice according to package instructions in a separate pot. Once done, remove from heat and let sit for 5 minutes.

  4. In a large measuring cup, whisk together the can of mushroom soup with 1 1/2 cups hot water and 1 Knorr stock gel until smooth and lump-free.

  5. Add the soup mixture to the turkey and broccoli. Stir well and reduce heat to low.

  6. Add the second stock gel directly to the pot and stir until fully dissolved.

  7. Finally, add the cooked wild rice to the soup. Simmer for another 5–10 minutes to let the flavors come together.

  8. Serve warm and enjoy!
