Ingredients:
1 box strawberry cake mix
2 large eggs
1/3 cup vegetable oil
8-10 fresh strawberries (halved)
1 1/2 cups white chocolate chips (or white melting chocolate)
Instructions:
Preheat oven: 350°F (175°C). Line a baking sheet with parchment paper.
Make the cookie dough:
In a large bowl, mix together the strawberry cake mix, eggs, and vegetable oil until fully combined. The dough will be thick.
Shape the cookies:
Scoop about 2 tablespoons of dough and roll into a ball. Place on the baking sheet and gently flatten the center a bit.
Bake:
Bake for 9 to 11 minutes, or until the edges are set. The centers will still look soft. Don’t overbake.
Add strawberries:
Immediately after removing the cookies from the oven, gently press a halved strawberry into the center of each warm cookie. Let the cookies cool completely on a wire rack.
Dip in white chocolate:
Melt white chocolate chips in the microwave in 20-second intervals, stirring each time, until smooth.
Decorate:
Dip one half of each cooled cookie (with the strawberry) into the melted white chocolate. Place on parchment paper.
Drizzle:
Drizzle extra white chocolate over the dipped side of the cookie using a fork or piping bag.
Set:
Let the cookies sit at room temperature or refrigerate for 10-15 minutes until the chocolate hardens.
Tips:
Pat strawberries dry before adding to cookies to prevent excess moisture.
Store cookies in the refrigerator if not serving immediately.
