POTATO CHIP COOKIES

  • 1 pound of butter (use only butter – no margarine) (4 sticks)

  • 1 cup of sugar

  • 2 teaspoons vanilla extract

  • 2 cups crushed potato chips (I like UTZ or lightly salted Lay’s)

  • 3½ cups of flour

  1. Preheat oven to 350°F.

  2. Cream butter. Add sugar and vanilla – mix well.

  3. Add potato chips and mix.

  4. Add flour. Dough should be stiff.

  5. Drop dough by teaspoon (I use a melon baller scoop) onto ungreased cookie sheet. Leave room – cookies spread.

  6. Flatten each doughball crisscross with a fork (if fork sticks, you can dip it in flour first).

  7. Sprinkle colored sugar onto each cookie prior to baking.

  8. Bake approx. 11 minutes, until just tanning around outermost edge (Don’t overbake).

  9. Leave on cookie sheet a few minutes before removing.

  10. Store in airtight container.
